Chullin חולין

"Chullin" means the ordinary, the non-sacred. The tractate works through shechitah: who slaughters, with what, which defects make an animal treifah, how the lungs are examined. From here comes almost the whole body of kashrut law in use today.

Here too is the ban on cooking a kid in its mother's milk, grown into the full separation of meat and milk; the covering of the blood of birds and wild animals; the ban on taking the mother together with the young. Because it is so practical, Chullin is among the first tractates studied in yeshivot.
